I am making my first fondant bow and swags for a cake next week. I have only made MMF once before and it turned out great. I read on this site that adding CMC to the fondant will help the fondant hold it's shape.

When do I need to add the CMC and how much do i add?

Also, do I have to separate out the fondant used for decorations to add the CMC or can I add it to all the fondant?

I use Tylose powder, which I understand is equivalent to CMC. I only add it to the fondant I am using for figures. It makes the fondant easier to model with. I add about 1/2 tsp. of Tylose to 1/2 lb. of fondant. Just sprinkle the Tylose on your board and knead it into the fondant.

You need the powder into your already prepared fondant. I'd start with 1 tsp to 1 pound of fondant to start and add more as needed (up to 3 tsp). The CMC/tylose makes the fondant and dry faster and harder than just fondant alone. It's the quick way of making gumpaste.

You would use fondant to cover cakes and make edible decorations for your cake like ribbon for the base of your cake or 2d accent pieces (like dots/circles/strips) and other cutouts you would attach to your cake. You use gumpaste (gp) to make things like flowers and bows. You can make bows and flowers out of fondant too but you cannot roll them out as thin and because they do not dry as fast as gp you may end up with a limp looking bow icon_lol.gif . Due to the fact that you can roll out gp really thin it makes things like flowers and bows look more realistic. I usually use gp for most of my 3d decorations just because I know it will dry really fast and is hard.

You can add CMC to your whole batch of fondant but you usually do not need that much. You need much more fondant to cover your cake. Your decorations don't take as much gp as it does to cover your cake in fondant.

If you want to make a whole batch you could always try Nicolas Lodge's recipe.
